Throughout our years of growing and selling vegetables, we are seeing a trend that disturbs us. People are not eating as many fruits and vegetables. Does it bother us because we may not sell as many? No, it worries us because we all need fruits and vegetables to help keep us healthy. It has been proven. Years and years of studies have shown that fruits and vegetables are full of the vitamins and nutrients that fend off disease and health problems. It’s an undeniable fact. So why do people fail to eat enough?

Let’s face it, our world has become a lot faster. Everybody is always running. Going to work, going to the gym, taking kids to sports and all types of after school activities. Any time that we’re not working or running, we want to relax. This means not wanting to spend time cooking. It’s easier to eat out or buy food that’s ready to eat. And unfortunately, preparing vegetables takes time.

This is where we have to make a big decision, and commitment. Do you want to take the time to prepare, cook and eat vegetables in order for stay healthy now and in the future, or do you want to continue eating the “fast way”? For me, I’d rather not support the pharmaceutical companies any more than I have to. That’s not to say I won’t get sick somewhere down the line, but anything I can do to prevent it is a bonus. So I’ll keep eating plenty of fruits and vegetables and freezing them for the winter months.
